Thai Peanut Pizza

This no-bake pizza is easy to make in a hurry! And if you like Thai food, it is sure to tantalize your taste buds! You can even take it with you to work–just store components separately and assemble when you are ready to eat it.
3 tbsp plain hummus
½ cup shredded carrot
Sriracha (optional)
Peanut Sauce
1 tbsp peanut butter
1 tbsp hoisin sauce
½ tsp honey or agave nectar
½ tsp low-sodium soy sauce**
¼ tsp lemon juice
dash of ground ginger
1. In a small bowl,whisk peanut butter with 1½-tsp warm water, hoisin, sweetener, soy sauce, vinegar, and a light dash of ginger. Taste and adjust.
2. Spread hummus on pita.
3. Top with shredded carrots.
4. Drizzle with Peanut Sauce and Sriracha.
Chef’s note: Feel free to change things up and experiment with different veggies. And always remember, you can use a GF pizza crust if needed (in fact, that’s what was used for the photo).
