Strawberry/Peach Frozen Swirl

Ice cream doesn’t have to have any cream in it, vegan or otherwise, nor does it need added sugar. Sometimes the refreshing taste of creamy fruit is all that’s needed to make a delicious dessert. By blending separately and swirling, you get an eye-pleasing treat that’s sure to impress just about everyone.
- It helps if you allow the fruit to thaw a little before processing. It shouldn’t be rock hard, but it shouldn’t be easy to smash, either. Maybe 5-10 minutes.
- Process one fruit in a food processor until creamy. You may need to stop the processor from time to time to smash down chunks. Depending on your processor and how cold the fruit is, you may end up with an icy sand, which will gradually melt and stick together. This is okay, too. You could add a little milk to speed up the process, which will make it much like a soft serve.
- When the first is done, transfer to a bowl and put in the freezer (unless you have an icy sand texture, in which case, let it thaw a bit) while you process the second fruit. When it’s done, pour over the first one and stir once or twice to swirl them together. Serve immediately, because it will get very hard if frozen.
Chef’s note: You can use any fruit you like in this recipe. Try dribbling a nice sauce, such as Carob Sauce, over top.
