Southwest Corn Salad

This tasty corn salad makes a great dish to take to your next picnic or BBQ, and is a delicious side to any meal.
2 cups corn
3/4 cup chopped red pepper
1/2 cup chopped scallion or onion
1/4 cup chopped cilantro (or to taste)
2-4 T. lemon juice (or to taste)
Sea Salt to taste
1/2 t. cumin
Pinch of cayenne (or to taste)
In a bowl combine all ingredients and toss together.
Serve chilled.
Chef’s notes: This side dish can be made into a one-dish meal easily: Just add a can of drained, rinsed black beans, and you have a one-dish meal!
