Pizza with Almond Mozzarella

Sure, you can make dairy-free pizza without cheese. But sometimes you just want something stretchy and melty on top, without paying an arm and a leg for the vegan cheeses that are only moderately healthy and quite expensive. Almond flour may be an investment, but you only need a little, so it will last a while. Or you can sub soaked cashews (but almond flour gives a better flavor and whiter color). Have fun experimenting with toppings!

1/4 C. Almond flour
1 C. hot water
2  T. + 1 t. tapioca starch
1 small garlic clove, minced
3/4  t. sea salt
1 t. fresh lemon juice

Favorite Pizza toppings

1. Blend all ingredients together until completely smooth, about 1 minute.
2. Pour into a small saucepan and cook, stirring constantly over medium high heat until it becomes really thick.
3. Remove from heat and let cool a bit while you assemble the pizzas.
4. Spread pizza sauce on crust, add desired toppings and cheese. Bake at 375°F for 10 minutes or until cheese starts to brown.
