Lemon Raspberry Muffins

It is the custom and order of society to take a slight breakfast. But this is not the best way to treat the stomach. At breakfast time the stomach is in a better condition to take care of more food than at the second or third meal of the day. The habit of eating a sparing breakfast and a large dinner is wrong. Make your breakfast correspond more nearly to the heartiest meal of the day.—EGW, Letter 3, 1884

These muffins are the perfect addition to hearty breakfast. Pair them with a veggie loaded tofu scramble and you’re set to start your day out on the right foot. The raspberries add antioxidants, the flaxseed adds tryptophan for brain health, and the lemon adds in germ fighting power, something we could all use a little bit extra of this time of year!

Lemon Raspberry Muffins

Ingredients:

  • 1 Lemon
  • 1/2 cup raw cane sugar
  • 1 cup milk alternative, add 1 tsp apple cider vinegar to make “buttermilk”
  • 1/3 cup coconut oil (or replace with white beans pureed to make these oil free)
  • 1 tbsp ground flaxseed
  • 3 tbsp water
  • 1 tsp vanilla extract
  • 1 cup whole wheat flour
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp Himalayan salt
  • 1 1/2 cups fresh or frozen(not thawed) raspberries

Directions:

  1. Preheat oven to 400 degrees F. Grease 12 large muffin cups with cooking spray or line with paper liners.
  2. Zest 1 lemon and combine with sugar in a medium mixing bowl. Add “buttermilk,” oil, flaxseed, water, vanilla, and mix until well blended.
  3. Combine both flours, baking powder, baking soda and salt, in a large mixing bowl. Add the wet mixture and fold until almost blended. Gently add in raspberries.
  4. Divide the batter into the muffin cups. Bake until the edges and tops are golden, 20-25 minutes. Let cool in pan for 5 minutes before turning onto a wire rack. Serve warm.
