Just because you gave up meat doesn’t mean you have to give up BBQ! This BBQ pizza recipe is loaded with protein and looks absolutely delicious! This is perfect for a quick meal (especially if you skip roasting the garbanzos), and really hits the spot.
½ cup prepared chickpeas
¼ cup barbecue sauce
1 flatbread or small, pre-cooked pizza crust
1 tomato diced
¼ small red or sweet onion slice or dice
1 green onion (opt)
1. Place chickpeas evenly on a parchment-sheet-lined baking sheet and roast at 375°F for 10-15 minutes. (May omit this step if in a hurry.)
2. Spread BBQ sauce evenly pizza crust
3. Top with garbanzos, tomato, and onion
Chef’s Note: Feel free to add other veggies, either on top or on the side. This would be awesome with a side salad.
