INGREDIENTS:
Place in Bosch or other bread mixer:
- 5 cups warm water
- 2 T. yeast
- ½-3/4 cup honey
- ⅓-1/2 cup oil, olive oil light preferred
- 4 t. salt
- 5 T. gluten flour
- 3 cups unbleached flour
- 8 cups whole wheat flour
DIRECTIONS:
Mix ingredients thoroughly and then turn off machine and let rest for 25 minutes.
Turn on Bosch and allow to knead for 25 minutes. If dough sticks to sides add 1-2 cups whole wheat flour during kneading time. Form into loaves and place in sprayed bread pans. Let rise in a warm place until double. (I preheat my oven to 150º then turn it off and place bread in it to rise for about 45 minutes. Then remove the bread and heat the oven for baking.) Bake at 300º degrees for 35-40 minutes.
Yields 4 large loaves or use part of the dough for pizza crusts, hamburger buns, or sweet rolls.
