INGREDIENTS:
- 1 onion cut in ½ then sliced
- 1 green bell pepper
- 1 red bell pepper
- 1-2 zucchini, sliced
- ¾ carrot, shredded
- 4 garlic cloves, minced
- 3 T cilantro, minced
- 1 ½ c salsa
- ½ tsp sea salt
- ½ tsp cumin
- 8 corn tortillas
- ¾ c guacamole
DIRECTIONS:
Sauté onion, peppers, and garlic for 5 minutes. Add zucchini, carrots, cilantro, salsa, salt and cumin. Cook vegetables until tender. Roll in steamed or lightly browned corn tortillas. Serve with beans and brown rice. Garnish with guacamole.
May use black bean chili or salsa with ¾ cup black beans instead of salsa.
