INGREDIENTS:
- 1 12 oz. cube tofu, sliced
- 1 T Vegetable oil
- 1 green bell pepper, sliced thin
- 1 red bell pepper, sliced thin
- 1 onion, sliced thin
- 1 zucchini, cut in thin strips
- 3 cloves garlic, minced
Fajita Marinade:
- ½ c. water
- ¼ c. lemon juice
- 2 cloves garlic, crushed
- ½ tsp. Oregano
- ½ tsp. Ground cumin
- 2 tsp. Brown sugar
- dash of cayenne
- 1/8 tsp. Smoke flavoring
- 1 Tbsp. Vegetarian Worcestershire sauce
DIRECTIONS:
Marinate tofu for two hours in a shallow dish in the refrigerator.
In a hot non-stick skillet sauté marinated tofu in oil. Set aside and saute vegetables, then combine.
Serve with warmed corn or flour tortillas. Add lettuce, chopped tomatoes, soy supreme sour cream and sliced avocadoes.
