Pina Colada Pie
 

INGREDIENTS:

Blend:

  • 1 cup coconut or rice milk
  • 1 cup cashews
  • 20 oz. crushed pineapple
  • Add and blend:
  • ½ c. maple syrup
  • ½ tsp salt
  • 1/3 cup + 1 T. corn starch
  • 2 tsp vanilla

 

DIRECTIONS:

Coconut crust is recommended

Stir in pan over medium heat until thickened. Slice 2 bananas and dip in lemon juice. Line bottom of crust with bananas and pour in thickened filling and chill for several hours or overnight. Serve chilled.
