Pimento Cheese Brick
 

INGREDIENTS:

  • 1 ½ c. Water  
  • 5 Tbs. Agar Flakes
  • 1 ¼ tsp. Salt
  • 2 tsp. Onion Powder
  • ¾ c. Cashew Pieces or Tahini 
  • ¼ tsp. Garlic Powder
  • 1-2 Tbs. Sesame Seeds
  • ¼ c. Nutritional Yeast or 1 Tbs. Tahini (Omit if using Tahini above)
  • ½ c. Pimentos
  • 2 ½ Tbs. Lemon Juice

 

DIRECTIONS:

Put first two ingredients into small saucepan and bring to boil. Reduce heat to medium and simmer for 5 minutes, stirring frequently. Place remaining ingredients in blender. Add agar mixture when cooked. Blend all ingredients on high 1-2 minutes until creamy, stopping blender once or twice to stir contents. Pour into mold and chill overnight.

Yield: 2 ½ cups.

 

Variations:

To make different flavors, fold in one of the following before pouring cheese into mold.

  • Olive – ¾ cups finely chopped olives
  • Toasted Sesame – 2 Tbs. toasted sesame seeds
  • Caraway – 1 ½ Tbs. caraway seeds
  • Dill – 2 Tbs. dill weed
  • Onion-Dill – 1 Tbs. + 2 tsp. dehydrated onion flakes and 2 ¼ tsp. dill seed/weed
