egan Recipes:  Desserts - Pie Crusts
 

Simple Coconut Crust
 

INGREDIENTS:

Combine:

  • 3 c. almonds or pecans
  • ¾  c. unsweetened shredded coconut
  • ½ c. maple syrup
     

 

Granola Crust
 

INGREDIENTS:

  • 3 cups ground granola
  • 2-3 T. oil
  • 3-4 T. water
  • ½ tsp. vanilla
  • 2 T. honey
     

DIRECTIONS:

Blend 2 c. granola on high until fine. Pour into bowl and repeat. (2 c. granola = 1 ½- 1 2/3 c. ground.) Measure 3 c. ground granola and put in bowl. Add remaining ingredients. Stir together with fork and then mix together well with hands. For baked pie shell, press into bottom and sides of pan. Bake at 350° degrees for 25-30 minutes. Yield: 1-9" pie shell or bottom crust for 9" x 13" baking dish.
 

 

Graham Cracker Crust #1
 

INGREDIENTS:

  • 8 large honey flavored graham crackers, crushed
  • 3 T maple syrup
  • 2 T olive oil

DIRECTIONS:

Press into 9 inch plate and bake at 350° for 12 minutes.
 

 

Graham Cracker Crust #2

INGREDIENTS:

  • 1 1/4 c. Midel graham crackers
  • 2 T. fructose or other sweetner
  • 1/4 c. vegan margarine or oil

DIRECTIONS:

Melt margarine and blend well with graham cracker crumbs and sweetner. Press well into bottom of spring-form pan or round cake pan. Bake at 350º for 10 minutes. Let cool before adding filling.
