Serves: 6 Prep time: 3 hours
INGREDIENTS:
- 2 c black beans, dry
- 1 lg onion, chopped
- 3 garlic cloves, minced
- 1/3 c fresh cilantro, chopped
- 1 tsp chili powder
- 2 tsp cumin
- 3 ˝ c fresh tomatoes
- 1 T honey
- 1 T sea salt
DIRECTIONS:
Soak beans overnight. The next morning change water and cook beans with sea salt until tender, about 2 hours. Drain water from beans. Sauté onions and bell pepper, honey and seasonings. Add tomatoes and cilantro. Mash down tomatoes. Add beans. If using as a filling for a burrito or fajita, mash beans before adding to vegetable mix.
May also use two 15oz cans of Mexican stewed tomatoes instead of fresh tomatoes.
