Apple Burritos
 

INGREDIENTS:

  • 6 Lg apples
  • 1/4c. apple juice concentrate
  • 1/2t powdered vanilla
  • 1 t maple syrup
  • 1/2c raisins or dried other dried fruit (ie. cranberries, dates etc)
  • 1/2 t cinnamon substitute
  • 16 tortillas - corn or flour (be sure to try whole wheat ones!)
  • 1 recipe apple syrup

 

DIRECTIONS:

Peel, core and chop apples. Cook apples in apple juice until tender and add remaining ingredients. Simmer until sauce thickens. Place 1/3 c mixture in center of warm tortilla, roll up and place in oiled or sprayed pan. When all burritos are in the pan cover with Apple syrup (see below.)

Bake 350 for 20-30 min

Apple Syrup

INGREDIENTS:

  • 16 oz apple juice concentrate
  • 2 c water
  • 1/4 c. corn starch
  • 1/2 t lemon juice
  • 1/2 t cinnamon substitute

DIRECTIONS:

Place all ingredients in a pot. Stir until cornstarch is incorporated with out lumps. Cook over med heat until slightly thick.
